I will be going to the Buffalo area later this month with some co-workers who are somewhat new to disc golf. Can anyone suggest a good course or two near Buffalo? Not a Pro's course, please.

Ellicott Creek is perfect for beginners.
Beaver Island is a little tougher, but makes for a nice doubleheader w/Ellicott.
Both are north of the city.
In the Southtowns try Chestnut Ridge (intermediate like Beaver) and/or Emery Park (very difficult).

I have played Chestnut Ridge a couple times and it is a really fun course! Highly recommended.
